- Faustina Rolls Out Weekend Brunch for 2012 -
Sotelo's Talents Turn Toward Morning Hours Saturdays and Sundays Beginning January 7th
Taking his talents to the morning hours is something executive chef Billy Sotelo has dreamed of for some time. Faustina will open for its inaugural brunch on Saturday, Jan. 7, 2012. Brunch will be served each Saturday and Sunday from 9 a.m. to 3 p.m. Faustina will still be open for dinner those nights starting at 4:30 p.m.
Sotelo excels at taking traditional brunch items and putting his creative spin on them. His new signature creations round out a solid brunch menu consisting of sides and starters, salads, imaginative egg dishes, deliciously sweet breakfast breads and innovative sandwiches. Highlights include Brie stuffed brioche French toast, decadent cinnamon swirl pancakes with cream cheese glaze; brie puff pastry with roasted red grapes and a seasonal berry compote; Faustina Benedict with polenta, local Italian sausage, grilled tomato, poached eggs and hollandaise sauce, served with house made breakfast potatoes; and Sotelo's Faustina Scramble with artisan lamb sausage, roasted pepper medley, Asiago cheese and scrambled eggs served with a French baguette.
"My personal favorite is the Black Forest ham puff pastry," said Billy Sotelo, executive chef. "it's so beautiful with the sunny side up egg in the middle and delectable with the Gruyere cheese and my newly created Mosiah sauce as a foil."
